I just picked a great big handful of peppers today, mostly Jalapenos, a couple of Bulgarian Carrots and a couple of Pepperoncinnis.
One of the red Jalapenos or Bulgarian Carrots are so hot for me and my family that there is no way that I could use all of the peppers in enough recipes. So I will wash them and then drop them into a freezer bag and freeze. I will also cut up a few for when I only need a small amount of heat since these peppers are so hot.
They will be pretty limp when thawed out, but will be great for anything needing a little spice.
