With the temperatures being around 110 for the last couple of days, I am getting a bunch of squash and eggplants. It seemed like they doubled in size overnight. This is what I picked this morning.
1 very large Zucchini, 2 Eggplants, 3 Yellow Squash, 2 Tomatoes, 2 Pepperoncinis and a small handful of cherry type tomatoes
We’ll eat the tomatoes fresh, but now I need a new idea on what to do with the rest for dinner because I haven’t found anything yet. Any ideas?

my best ‘recipe’ is to go to grouprecipes.com it is a fabulous site…just search…eggplant… I am a member on this site…however you do not have to be to get recipes…

With exeception of your tomato, you could fry everything you have. Use a cracker crumb and egg dip and fry with olive oil in a skillett. Slice the squash and eqqplant and peppers lengthwise. Dip the veggies in a beaten egg
mixture in a bowl and then dip in flour or cracker crumbs and then back into the egg dip and the put in the skillett until golden brown. Season with pepper and a little salt as soon as you take them out of the skillet and enjoy. Serve with either blue cheese or ranch dip. Yum!
