What do you do with all the zucchini? I only have one zucchini plant on purpose, but it still puts out a couple of good size zucchinis ever 2 to 3 days. I also have 3 yellow crooked neck squash plants because for some reason we like them a little more than the green zucchinis. Must be in our heads because honestly, they taste pretty much the same. The kids prefer yellow over green.
Four of my five kids and I enjoy our zucchini roasted in my on the counter small Kitchenaid oven.
I just slice them up, along with some onions, olive oil, salt and pepper, sometimes minced garlic…
…and then roast it at 450 degrees for 20 minutes or so. Yum!
I picked three zucchinis over the weekend and tried your recipe. It was very yummy!! Thank you for the idea. I saw some more today that should be ready soon. You have the right idea with only one plant. I’ve got three and will be blessing my neighbors with the extras!

Aunt Betty, I’m so glad you stopped by! The sauce made with the squash, eggplant and tomatoes did remind me a little bit of what grandma made. I have no idea how she made hers. Do you have any ideas on what to do with squash and eggplant? I’m running out of ideas!
